Comtess Gewurztraminer Passito Sanct Valentin is a fortified wine produced by the Dolomite winery San Michele Appiano . The label is obtained by vinifying mostly Gewurztraminer grapes, to which small percentages of Riesling and Sauvignon are added. All these white berried varieties express themselves excellently at the foot of the Dolomites. To obtain the perfect sugar concentration, the grapes are left to dry on trellises with careful monitoring of the development of the noble rot. Towards the first ten days of December, the bunches are selected by hand for transport to the cellar. The alcoholic fermentation phase involves the division into two lots, which provide for the use of small wooden vats and stainless steel tanks respectively. After blending, the wine ages for a few months in steel. Comtess Gewurztraminer Passito Sanct Valentin is excellent to be enjoyed immediately, as well as after a couple of years of further rest.
