Description
Coniale di Castellare Toscana IGT is a structured and intense red wine, produced by the Castellare di Castellina winery. It is obtained from the exclusive vinification of Cabernet Sauvignon grapes, an international vine that has found the ideal conditions to thrive on the Chianti soils. The plots are located 400 meters above sea level, where the vines grown with the Guyot system sink their roots into substrates with a good percentage of skeleton. Once the harvest is complete, the bunches arrive in the cellar, where they are placed to macerate on the skins for about 24 hours. Alcoholic fermentation follows, which takes place in modern steel tanks for over a month. For the refinement, the company chooses precious oak barriques, half of which are second and third passage, in which the wine rests for about a year. Perfect right from the start, Coniale di Castellare Toscana IGT boasts enormous potential to further evolve in the cellar for several years.
