Description
Friuli Colli Orientali Sauvignon DOC Dei Peschi is one of the whites of the Ronc Soreli company. This winery is located in the small hamlet of Novacuzzo, in Friuli Venezia Giulia; here, on forty-two fertile hectares of land, Italian and international vines are grown organically. The white in question is produced entirely from sauvignon vines, cultivated according to the Guyot method on a soil composed of marl and sandstone. The harvest is done manually when ripe, between the end of August and the beginning of September; the harvested grapes are subjected to soft pressing, after which the must is left to ferment in stainless steel tanks at a controlled temperature. Before bottling, the wine spends the last six months in concrete tanks to refine on the lees. The Friuli Colli Orientali Sauvignon DOC Dei Peschi thus obtained is a mineral, fresh and persistent wine, to be uncorked necessarily within its first two years of life.
