Description

The Dolcetto d'Alba DOC red wine from the Oddero winery is obtained using only Dolcetto grapes. This winery boasts a very long tradition that combines winemaking tradition and modern technologies, all while always ensuring the utmost respect for the territory and the ecosystem. The vines are cultivated with the Guyot technique, at a height of about 300 metres, on hills characterized by clayey soils rich in mineral salts. This ensures the production of excellent quality grapes. The production technique is followed with extreme care right from the harvest which begins in the second ten days of September, when the bunches have reached the right ripeness. Then follows a period of fermentation and maceration in stainless steel to then carry out a subsequent malolactic fermentation always in steel. Dolcetto, despite its name, is not sweet at all: it is believed that the name derives from the high sugar concentration of the ripe grapes, which, in the past, had made the bunches valuable even for consumption as table grapes. In our case, we obtain a medium-bodied wine with a fine structure, soft and balanced, with good tannic and fruity scents. Excellent in combination with the first courses of the Langhe cuisine.
