It is an important wine, dedicated to Henry Dunant, the founder of the International Red Cross who, right here, in these lands, had the inspiration to set up a relief corps after the ferocious battle of Solferino, in 1859. The blend which is produced consists of Groppello, Marzemino, Sangiovese and Barbera. The grapes of the different varieties are harvested by hand, they are crushed and de-stemmed in the cellar, the alcoholic fermentation takes place at a controlled temperature; the maceration of the skins, in steel tanks, usually lasts from 7 to 10 days with several daily pumping over. Malolactic fermentation is normally favored, the wine is then aged in steel tanks for up to 12 months. A small part is aged in wood.
It has a beautiful bright ruby color, the bouquet is of good intensity, it has fruity notes (cherry, blackberry) and seductive spicy scents. The taste is warm, with soft tannins, the aftertaste is sweet and persistent. It has the great and peculiar ability to be broad and full and at the same time very pleasant to drink. It can mature well for 4-5 years developing sweet aromas of jam, fine notes of tobacco and leather crossed by spicy hints of black pepper. It is the characteristic "Rosso del Lago", very pleasant without exceeding in complexity. These characteristics make it combinable with many dishes: from appetizers based on cured meats, to first courses up to grilled meat, with which it balances its sweet tannins.
