Etna Bianco Cottenera 2021 is a wine obtained with Carricante grapes, an ancient white grape variety, native to the Etna area. It is produced by the Cottanera farm, in Castiglione di Sicilia, located 700 meters above sea level, on the north side of Etna; company born as a hazelnut grove and then transformed into a vineyard between the 70s and 80s. The area, in fact, thanks to its lava-alluvial soil and a climate characterized by a strong temperature range, lends itself very well to the cultivation of Carricante grapes, and more. To produce Etna Bianco Cottanera 2017, the grapes are trained using the spurred cordon system, with around 5,500 plants per hectare. After a short cold maceration, the berries are left to ferment in steel tanks for about 25 days and then aged on the lees for 6 months. The final product is a medium-structured, fresh and citrusy white wine which, with a particular and original note, acquires character with ageing.
