This Freisa di Chieri DOC Superiore is a real gem: it comes from a native vine that only in recent years has had the attention first of the producers and then of the public. The vines are really old (about 50 years old) and the few fruits that are born are really rich and qualitative. Special care is therefore taken for special wines, especially in the vinification phase: the pressing is soft to collect the best from the bunch, without mistreating it. Fermentation takes place in small steel tanks (5-10 hl) and vertical 5 hl French oak tonneaux, without temperature control. Then we have the aging for 6 months in old Swiss barrels of 20 hl and another 6 months in new French oak barrels of 20 hl, all of which ends with a further passage of 2 months in steel tanks. It owes its name to a classic Piedmontese way of saying that is used when in company and toasting with friends. It is a perfumed, elegant wine which induces the drink easily and pleasantly. It goes well with first courses or not particularly structured meat dishes. Super limited production of less than 2500 bottles.
