The Gewurztraminer of the Novacella Abbey is a rich and aromatic white wine with a controlled denomination of origin. The vines cultivated for the production of this excellent product have belonged to the Novacella Abbey for entire generations and grow in a mixed soil, gravelly, sandy and with the presence of silt which gives them their main characteristics. The cultivation area, which is located around the towns of Bressanone, Varna and Naz-Sciaves, in Alto Adige, is located at about 600-700 meters above sea level and is characterized by averagely hot days and rather cool nights. Gewurztraminer is produced alone (only this grape), the fruits of which are harvested at the beginning of October, selected with great care and subjected to soft pressing. The alcoholic fermentation of the must then takes place in special steel tanks, which maintain the organoleptic characteristics of the fruit, at a temperature that does not exceed 20°C. Particular natural yeasts are added to the must. Subsequently, the refinement takes place for six months, always inside steel tanks. The last phase before the sale is the refinement in the bottle for a few months. It is a rich, intense wine, it has a fruity bouquet, with notes of lychee, rose and vanilla in evidence. Aromatic, balanced and persistent, it certainly has an intrinsic gift, rare for this type of grape: it never tires!
