With the intention of limiting human intervention and the use of synthetic products as much as possible, the cellar follows the rigorous principles of organic cultivation. This choice allows the vines to enjoy optimal conditions on the owned vineyards, thanks also to the favorable microclimate and the richness of the soil. When they reach the ideal degree of ripeness, only the best bunches are harvested by hand. Once in the cellar, the grapes are gently pressed and left to ferment in steel vats. The wine then remains in the same containers for refinement which lasts until the spring following the harvest.
