High Grappa in Barrels of Sauternes Poli Jacopo Wooden Box

Sauternes Grappa Elevated in Barrels is a product of the Poli Jacopo distillery, founded more than two hundred years ago in Schiavon, in the province of Vicenza. The company is based on modern principles such as total respect for the environment and the exclusion of synthetic additives; at the same time, however, it is distinguished by a solid link with tradition, which is evident from the use of classical methods and procedures. This liqueur is so called because it is left to rest in the same oak barrels in which the Sauternes wine is aged. The manufacturing process is artisanal and involves the use of small discontinuous cycle steam boilers. For the distillation of Grappa Elevate in Barili di Sauternes, a historic copper alembic is used, used by the Poli family for many years: a real heirloom, which gives the whole a particular harmony of flavours. The distillate, obtained from the pomace of vines from the French territory of Bordeaux, is characterized by a complex body and a broad and clean sip, typical of home-made products.
