Description

The Malvasia Bianca and Sauvignon Blanc vines are found in the San Marzano area in Salento, harvested and blended by the San Marzano winery for the production of Il Pumo Sauvignon Malvasia Salento IGP , an internationally award-winning wine. On shallow soils at 100 meters above sea level, in a Mediterranean climate, sunny and caressed by sea breezes, there are approximately 1500 hectares of land that the 1200 members of the winery cultivate year after year with dedication and respect for the grapes and the territory. The vinification process of Il Pumo Sauvignon Malvasia Salento PGI begins with the destemming and soft pressing of the grapes with a subsequent cold static decantation to allow for natural cleaning. The alcoholic fermentation takes place in stainless steel tanks at 16°C. The product that derives from this process is a wine of excellent freshness and mineral, which can be consumed immediately but maintains its identity and characteristics even if kept in the cellar for 2 years.
