'The Seal' Aglianico del Vulture DOC Cantine del Notaio 2015

The Aglianico del Vulture Il Sigillo by Cantine del Notaio is a DOC red wine produced in the luxuriant territory of Vulture in Basilicata, a land of volcanic origin rich in mineral elements and tuffaceous layers. Il Sigillo is a full-bodied garnet red produced with 100% Aglianico grapes, with a rich and elegant flavour. The vineyards of the Cantine del Notaio winery are distributed in various municipalities of the Vulture at an altitude of 460/480 meters above sea level with an eastern exposure. The harvest is done by hand in the period between late November and early December, when the fruits are about to wither due to the intense cold, an innovative technique developed by the Cantine del Notaio which interrupts the tradition of harvesting Aglianico in the autumn months. The maturation process of the Sigillo is carried out in natural caves of volcanic tuff for a period of 24 months, helping to form deep and sweet notes with a slight sugary aftertaste. Before being sold, the Sigillo is bottled and left to age in the bottle for another 24 months. The nose is characterized by persistent references to dried fruit, juniper berries and rosemary.
