Ius Naturae Valdobbiadene Prosecco Superiore DOCG Brut Millesimato Biologico is a sparkling wine from Bortolomiol , a historic company in the area that has long since embarked on a path of conversion to sustainable viticulture. From the reduction of interventions in the vineyard to the use of only organic products: the cultivation method chosen by the company allows the Glera grapes to fully express their aromatic characteristics. Following the manual harvest, which takes place in line with the tradition of the cellar, the grapes arrive in the cellar, where they are subjected to a very soft pressing. The subsequent fermentation on selected yeasts takes place in an autoclave at a controlled temperature, as required by the Martinotti method. Finally, the second fermentation and a short refinement of about three months follow to give softness to the final product.
