The Ivag of the Cascina degli Ulivi Belotti winery is a white wine from the Cortese vine. It was Stefano Bellotti who made Ivag a wine of excellence and one of the spearheads of the Gavi area. Stefano has embraced the principles of biodynamics since 1984 so as to elect them as the cornerstone of the entire cellar. The wine is obtained with the intention of enhancing the natural characteristics of the grape in full respect of the fruit and biodiversity; a purpose, this, which underlies all stages of production of Ivag, from the vineyard to the cellar. Manual harvest, spontaneous fermentation in oak barrels, twelve-month aging and bottling without added sulphites are the phases that distinguish the production of the Gavi white, an expression of 100% Cortese grapes from vines that are about 60 years old. The Ivag of the Cascina degli Ulivi Belotti winery is a fresh white with a delicate and floral profile.
