In Alto Adige, around Bressanone and the town of Varna, the Kerner "Praepositus" of the Novacella Abbey is produced, a white wine born from the processing of this aromatic vine of German origin. This plant, the fruit of a cross between red grapes and white grapes which took place in 1929 in Germany, is cultivated according to the Guyot system at an altitude ranging from 650 to 700 meters above sea level. The soil is of morainic origin and is made up partly of gravel and partly of silty-sandy materials. The harvest takes place during the beginning of October, when the grapes reach the ideal ripeness. After pressing, the fruits are fermented at a controlled temperature of 20°C in steel tanks. Subsequently the must is left to mature for six months and following bottling the refinement in the bottle takes place, for a period of at least three months, to let the Praepositus take on all its main characteristics, for which it is so much appreciated by consumers . It is a wine with a pleasant and refreshing drink, of great expressive clarity. Elegant citrus notes, with slight vegetable nuances, accompany a soft and characteristic sip, with good freshness and flavor.
