Description
L'ame de la Terre Champagne AOC Extra Brut Millesime is made by the Francoise Bedel maison. This champagne is made from Pinot Meunier grapes, present for 90%, to which a small quantity of Pinot Noir and Chardonnay is added. The plots are located near the small village of Crouttes-sur-Marne and boast particularly suitable soils. Among the rows, the works are still under organic certification. When ripe, the best grapes are harvested by hand. The grapes are left to ferment in special enamelled tanks, while 5% of the lot ferments in oak barrels. In line with the Champenoise Method, the aging on the lees coincides with the refermentation in the bottle and lasts over 5 years. After disgorgement, the liquer d'expédition is added, in small quantities. Excellent immediately, L'ame de la Terre Champagne AOC Extra Brut Millesime boasts a considerable potential for evolution over a few years.
