Description
L'ame de la Terre Champagne Brut Millesime is a splendid champagne made by the producer Francoise Bedel , which pays homage to the most authentic character of the appellation. The blend used to produce this champagne includes 60% Pinot Meunier, 30% Chardonnay and finally 10% Pinot Noir. Cultivated according to a philosophy inspired by the principles of biodynamics, the vines draw nourishment from clayey and calcareous substrates. The harvest takes place separately, depending on the variety. Once in the cellar, the grapes are pressed and left to ferment in oak barrels for two years. The lots are then carefully assembled. As far as aging is concerned, the company follows the tradition of the Champenoise Method, letting the wine rest for ten years on the lees during the second fermentation in the bottle. With its fresh elegance, L'ame de la Terre Champagne Brut Millesime is perfect to be enjoyed immediately, or after a period of careful storage in the cellar, even for a few years.
