Description
Champagne L'Astre Blanc de Noirs Premier Cru , produced by David Leclapart , is a faithful interpretation of the terroir, surrounded by the splendid reliefs of Reims. Here the Pinot Noir grapes are grown, destined to be vinified alone. More precisely, the reference vineyard is that of Trepail, where the marl soils are covered with herbs of various species in line with the certified biodynamic viticulture practiced by the cellar. Once the manual phases of selection and harvesting of the best bunches have been completed, the first fermentation takes place, as per tradition, in wooden barrels. According to the Champenoise method, there is aging on the lees during the refermentation in the bottle, which lasts for 5 years. At the moment of disgorgement it is not filled with the Liqueur d'Expedition, to preserve the characteristics of the terroir and therefore the purity of the wine. Champagne L'Astre Blanc de Noirs Premier Cru is finely expressed immediately, as well as after a rest in the cellar that can last up to 3-4 years.
