Near the city of Bolzano, the Lagrein Sudtirolo DOC is produced by the historic Abbazia di Novacella winery , whose first productive harvests date back as far as 1142 and which maintains its production traditions unaltered with particular attention to safeguarding the native vines of South Tyrol. This red wine comes from the homonymous vines found at an altitude of about 250 meters above sea level and facing south-west; the soil on which they grow is of sandy alluvial origin with a high concentration of silt which, by gradually releasing water, makes it particularly suitable for viticulture. The grape harvest takes place in October in a semi-manual way and the fermentation of the must takes place in stainless steel tanks with maceration on the skins for a period of about 15 days; the refinement of Lagrein Sudtirolo DOC takes place in oak barrels for a period of at least 6 months, which adds to the freshness of the wine that full-bodied and velvety imprint.
