Langhe DOC Nebbiolo Paolo Scavino 2019

Nebbiolo Langhe DOC is a red wine made by the wine producer Paolo Scavino , dedicated to exalting the characteristics of this unique territory. The label is obtained from the single-variety vinification of Nebbiolo grapes grown on the vineyards owned by the company. To encourage the luxuriant growth of the vines, human intervention is limited and cultivation practices are respectful. Once they have reached the perfect degree of ripeness, the bunches are harvested by hand and transported to the cellar. The winemaking processes begin with destemming and continue with soft pressing. During the fermentation the temperatures are kept low to favor a delicate extraction of the aromas. A quick stay in untoasted oak barrels follows. The refinement continues in stainless steel, in order to preserve the varietal notes of the vine. Nebbiolo Langhe DOC is a red capable of surprising right away, as well as after 7-8 years of rest in the cellar.
