Le Ragone Ven Bianc Malvasia di Candia is a sparkling wine from Cantina Caleffi , a production reality dedicated to the enhancement of a little known but very suitable terroir. This label is obtained from the single-variety vinification of Malvasia di Candia grapes, a local variety characterized by intense aromas. On the two and a half hectares owned by the company, the vines enjoy the benefits deriving from clayey and nutrient-rich soils. Among the rows the work is based on the preservation of the ecosystem, limiting human intervention to targeted actions of pruning up to the harvest. In the cellar, the philosophy is inspired by ancestral methods and provides for fermentation in cement tanks. Thanks to the second fermentation in the bottle, which has always been used in these places to obtain a slight effervescence, the wine rests on the lees until it is marketed. Excellent immediately, Le Ragone Ven Bianc Malvasia di Candia can also be left to evolve in the cellar for a couple of years.
