Le Ragose Ven Ros Lambrusco is a sparkling wine produced by the Cantina Caleffi winery , which interprets the territory between Cremona and Mantua in a genuine way. The label is the result of a blend of local varieties, composed mostly of Lambrusco Viadanese, present for 75% of the total. Then 20% of Lambrusco Salamino grapes and the remaining 5% of Ancellotta are added. The peculiarities of the territory allow the vines to develop vigorously, producing healthy grapes with an ideal sugar concentration. Once the optimal level of ripeness has been reached, the bunches of the different varieties are harvested by hand. When they arrive in the cellar they are destemmed and subjected to a first fermentation. According to local tradition, refermentation in the bottle of the Classic Method is foreseen. This phase allows the wine to refine on its lees. Le Ragose Ven Ros Lambrusco is a wine designed to be appreciated when young, when the freshness and varietal characteristics emerge.
