Description
Les Rachais Champagne Rosé by producer Francis Boulard stands out for its ability to combine innovation and strong links with the legacy of generations of winemakers. It is obtained from the vinification and sparkling process of only Pinot Noir grapes, a particularly representative variety of the territory. The thirty-year-old vines grow on the calcareous soils of the Les Rachais cru and are grown in a biodynamic regime. Before being left to ferment in small oak barrels, the grapes macerate in contact with the skins for a maximum of 12 hours. This makes it possible to obtain a greater concentration of color and fragrance. The company's production philosophy combines the tradition of the Champenoise Method with biodynamic principles. For this reason, the second fermentation in the bottle follows the rhythms of the lunar calendar, as indeed happens for the previous steps of the vinification. Perfect immediately, Les Rachais Champagne Rosé has the potential to surprise even after resting for a few years in the cellar.
