Description
Les Vignes d'Autrefois Champagne Extra Brut Pinot Meunier , produced by the Laherte Freres maison, exemplifies this reality's dedication to enhancing the terroir. It is obtained from the exclusive vinification of Pinot Meunier grapes, already in itself, which is rare. The vines have an average age of about seventy years and are rooted in soils with a complex mineral profile, made up of clay, chalk and rock. They are grown according to the principles of biodynamics, therefore absolute respect for the naturalness of the work in the vineyard and in the cellar. The harvested grapes are delicately pressed and then left to ferment in oak vats, where they remain for about 6 months. In the tradition of the Champenoise Method, the second fermentation in the bottle, which involves a rest of 3 years on the lees, culminates with the disgorgement and the addition of a little liquer d'expedition. Les Vignes d'Autrefois Champagne Extra Brut Pinot Meunier is perfect immediately, as well as following a further evolution of at least 3 or 4 years.
