Legras & Haas

Chouilly is a splendid location in the Champagne region, among the most suitable in the entire area, in fact here the beautiful vineyards are all with the "Gran Cru" denomination, the top of the denominations and are mainly cultivated with Chardonnay. Legras & Haas is a family-run fashion house based right here in Choully. The winery was founded in 1991 by Brigitte Haas and François Legras, who share a deep passion for Champagne. François inherits the family tradition, linked to the production of Champagne since the end of the 19th century. In fact, it was his father Lucien who taught him the art of viticulture from an early age. The vineyards extend for approximately 30 hectares right in the Choully area. The harvest is carried out strictly by hand and the winemaking is carried out carefully for individual areas. Here there is a very precise working philosophy: the quality and typicality of Legras champagne begins in the vineyard and it is essential to know the history and characteristics of each individual vineyard. For this reason, each member of the Legras-Haas family is responsible for their own vineyards, which is more unique than rare. In the cellar, the first fermentation lasts about 7 months and, after the tirage phase, the Champagne rests in the bottle, on its yeasts, for at least 36 months. At the end of this period, the Champagne undergoes the classic disgorgement, after which the bottles are topped up and then left to rest further in the cellar until a perfect balance is achieved. Legras & Haas creates Champagne Blanc de Blancs (only Chardonnay) of great finesse, rich in aromatic complexity and extremely elegant. Despite their small size, or perhaps because of this, these labels are decidedly renowned, are regularly awarded and appear on the wine lists of the most prestigious restaurants in France, and beyond.
