Champagne AYALA, established in Aÿ, in the heart of the grands crus, since its foundation more than 150 years ago, is one of the oldest Champagne Maisons. Independent and familiar, today it is the archetype of the great Maison. It produces wines of great value, appreciated throughout the world for their freshness and elegance.

Champagne AYALA has always belonged to independent family structures and on a human scale. After the Second World War, the company went through a calm period in its history, its managers then occupying important roles within the Interprofessional Champagne Committee. In 2005, the Bollinger family took over the beautiful property with the intention of restoring its former luster: a period of renewal then began for Champagne AYALA, with a complete overhaul of the production tools and the arrival of new teams. Faithful to the original family spirit, the Maison today employs around fifteen people.
