Domaine Bernard Defaix

We are in the heart of Burgundy, in the most suitable area in the world for the production of Chardonnay, we are therefore in the Chablis area. Domaine Bernard Defaix is in its fourth generation, led by Bernard and his sons Sylvain and Didie r who also obtained the Organic certification in 2009, a very important step for how viticulture is understood at the Defaix house. These are already environmentalist precepts that have been handed down and applied for several generations and today find the seal with official certification. Today the Domaine Bernard Defaix extends over a vineyard area of approximately 25 hectares, in various and scattered vineyards and some of these can boast the top classification " Premier Cru" and "Grand Cru"; among these we especially remember the Chablis “Vaudesir” and “Bougros”. Obviously, the symbolic vines of Burgundy are grown between the rows, namely Pinot Noir and Chardonnay, with a small percentage destined for another variety, practically unknown to us: aligotè . In the daily work in the vineyard there is therefore an approach aimed at maximum protection of the vineyard and the environment , in the treatment of which the use of synthetic chemical products and herbicides is avoided. We therefore practice what Didier defines the "natural philosophy", or the implementation of preventive agronomic practices, sometimes particularly original, to avoid diseases in the vineyard. In the cellar, much attention is paid to the use of wooden barrels , so only some selected wines of the Domaine are vinified and aged in wood , while the majority is processed in steel containers or; this with the aim of maximizing the naturalness of the wine and its correspondence with the reference territory, one of the most suitable in the world . The Defaix family recipe is simple : experience , tradition, passion and respect for the territory to produce simply unique products.
