The history dates back to 1753, when the ancestors of the Maillart family cultivated vines in the nearby village of Chamery. With great commitment, dedication and, above all, a lot of passion, today we have reached the ninth generation who, in the person of Nicolas, firmly manages the company; he returned in 2003, after completing his studies in engineering and oenology. Thus, a tradition dating back almost three hundred years continues and keeps the philosophy of the maison intact, that is, bringing out all the potential of the reference terroir in its wines. Since 2009, the commitment to environmentally sustainable production has become a real must; the projects started with the construction of 130 m2 of photovoltaic panels, which represent a production equal to 90% of the maison's total consumption. At the end of a long ecological-environmental approach, the Maillart maison has been certified as HVE (High Environmental Value) and sustainable viticulture, a great recognition, after the economic investments made. The company owns vineyards only in the exclusive Premier and Grand Crus of the Reims hills and having acquired, over multiple generations, great experience in vineyard management, it has acquired great mastery in selecting the best grapes. This element has a profound impact, in a positive sense, on the quality of the Champagne produced. In line with the typical nature of the area, the vineyards are predominantly Pinot Noir (75%) and the remaining percentage Chardonnay: the first serves to give strength and substance, the second to complete its finesse. In the cellar, particular attention is paid to all production phases, regularly checking progress and adapting subsequent practices. The vinification and maturation are carried out both in steel tanks and in wooden barrels, depending on the origin of the grapes. "Reserve" wines are also partially barrel-aged to increase complexity. When the time comes to create the cuvee, having a wide variety of wines to choose from, there is the possibility of creating Champagne of a consistent quality, whilst also being able to preserve those that are very original and particularly expressive, i.e. the best “vintages”.
