Bibi Graetz

The Graetz family, of Austrian origin, purchased the splendid castle of Vincigliata, on the marvelous hills of Fiesole, in the early 1960s. It is a splendid building dating back to around the year 1000, surrounded by a large estate, with hectares of ancient vineyards of Sangiovese, Canaiolo, Colorino, at the time in a state of semi-abandonment. It will be Bibi himself, an artist graduated from the Academy of Fine Arts and in love with this natural paradise who, in 2000, will decide to abandon the arts he was involved in to move to the castle and dedicate himself to the production of wine, recovering precisely that ampelographic heritage of his provision, but ignored. So here is the identification of the first vineyard to be valorised, the Testamatta, which is precisely the first vineyard under the castle and which is worked and valorised by Bibi. This is how the history and fame of the winery was born, which over the years specialized in the research and valorization of native grapes and ancient vineyards. Graetz, as a true researcher, identifies other parcels with ancient vines around Tuscany and recovers precious parcels in Rufina, Greve, Panzano and also on the Isola del Giglio, recovering vineyards overlooking the sea of Ansonica, and thus adding up approximately 50 hectares vines. In the cellar, processing takes place in steel tanks and indigenous yeasts are used, naturally present on the skins. The refinement takes place in the same steel tanks or in oak barriques. The Bibi Graetz labels truly represent the territory of origin, a unique, authentic correspondence capable of satisfying and exciting even the most attentive enthusiasts; and this through complex and profound wines, all made with pure local vines.
