André Beaufort

Legend has it, in reality it really happened, that André Beaufort approached the absolutely natural cultivation of the vineyard due to health problems: in fact in 1969, after a dangerous allergic reaction caused by the (synthetic) chemical products used in the vineyard , decided to completely change direction, starting a production based first on organic farming and then on biodynamic farming. In fact, after the organic certification, he began to experiment with products based on homeopathy and aromatherapy; it therefore uses essential oils, dilutions and mixtures created specifically to also reduce the use of copper and sulphur, substances foreseen in organic management. Today, together with his son, he manages around 6 hectares of vineyards, divided between the Grand Crus of Polisy in the Aube and Ambonnay, where the winery is also located, all with Pinot Noir and Chgardonnay. The names of the areas where the vineyards are located already speak for themselves: they are, by far, among the best in the entire Champagne region. Naturally, the work in the cellar is consistent with the Beaufort philosophy, which is all based on artisanal and natural methods, on the rejection of synthetic products and on the absolute reduction of both mechanical and human interventions, in the vineyard and in the cellar. The bottles are then left to rest, according to the champenoise method, for very long months, until disgorgement, again carried out "a la volée", or by hand. Beaufort champagnes are truly unique, especially considering the fact that they are the result of absolutely "unconventional" agricultural and winemaking techniques. They are very particular, original Champagnes , "light years" away from the products of the large and famous Maisons that we all know. And for this reason they have found respect and approval from enthusiasts all over the world who compete for the few thousand bottles produced every year, with great energy.
