The Podversic winery, on the hills of the Friulian Collio, is the realization of a dream that Damijan had since he was young: the desire to produce wines by recovering and enhancing old abandoned vineyards and the ancient winemaking techniques of distant times. So he began to purchase the first small plots of old vineyards in the Monte Calvario area, which today form an integral part of the ten hectares of vineyards on which the company can currently count. Clearly the cultivated varieties are the traditional ones of the area, therefore not only the native ones such as Ribolla Gialla, Istrian Malvasia, Tocai, but also Merlot and Cabernet Sauvignon which, although not local, have "inhabited" these areas since time immemorial. Naturally, this is artisanal work: agronomic choices are adopted between the rows with natural methods, respectful of the environment and the ecosystem, with the desire to follow the rhythms of nature and the phases of the moon for all processes, starting from mowing of the grass and from pruning up to the harvest, strictly manual. The winemaking is also carried out according to traditional methods, entirely in wooden barrels, following the phases of the moon, slow rhythms and tradition. All this work leads to a truly excellent result, especially regarding the coherence between the territory and the character of the wines. Damijan's skill in the cellar makes this combination possible, a result often distorted, in other production situations, by overly technological and sophisticated processes. From the Ribolla Gialla to the Malvasia, from the Nekay to the White “Kaplja”, passing through the Pinot Grigio and the Red “Prelit”: all the wines that strictly bear the signature of “Damijan” and which, therefore, tell of his dream come true.
