The centuries-old experience, combined with the most current technologies and the passion of those who collaborate in the vineyard and in the cellar, make the wines of the Novacella Abbey rich in personality and character. It is the altitude, between 600 and 900 metres, the cool climate and the richness of minerals that make these lands ideal for the optimal development of the aromas and flavor of the typical white wines of the Isarco Valley such as Sylvaner, Müller Thurgau, Kerner , Gewürztraminer and Veltliner. This is why the Novacella Abbey can easily be considered a sort of "temple of viticulture" of the Isarco Valley: wine has been produced here for centuries, precisely since 1142. Today the Abbey has 25 hectares of property, but controls and makes wine from the grapes coming from the 50 hectares of the cooperative's contributing members, its exclusive suppliers. The vinification and refinement of the white wines take place in Novacella, while in Cornaiano there is another company headquarters where the red grapes converge and are processed. The management and control of the grapes of the contributing members and the dedication with which the Abbey has dedicated itself to the production of wines for centuries are an absolute guarantee of the high quality of the wines produced: mineral and tasty like only the wines of South Tyrol they know how to be. Here the style of the wines favors the natural expression of the individual territories, to which is added a notable discretion in expressing the varietal characteristics of the basic grapes.
