We are in the Speyside region of Scotland, one of the best known in the world for the production of whisky. The Macallan Distillery is located right here, on the west bank of the River Spey in Craigellachie; it consists of an estate of 158 hectares (of which 37 are dedicated to the cultivation of barley, the main ingredient of the famous distillate) and the Easter Elchies House, a beautiful residence dating back to 1700, which has become the symbol of Macallan. The distillery was founded, under the name Easter Elchies, in 1824 by a local farmer, Alexander Reid. In 1892 the new owner Roderick Kamp, ex-Talisker distiller, expanded and renewed the business, changing the name to Macallan, i.e. 'farm of Saint Fillian', a Scottish monk from the 18th century. Today the Macallan Distillery is a globally successful reality, purchased by the Edrington Group: the Macallan Single Malt is one of the best-selling whiskeys in the world. The very high quality of the distillate signed by Macallan is due to the careful production methods which involve the use of a fine quality of barley and unique copper stills. Only 16% of the distillate that comes out of the 14 stills is retained and placed in small oak barrels, the 'oak casks', used for the aging of sherry and bourbon. The very important water used during the production processes comes from a spring that flows beneath the estates. However, peat is not used as fuel and the flame is placed in direct contact with the still, which is heated very slowly. The fabulous Single Malts produced express intense aromas and unique tastes due to the distillation in small stills. The aging woods, precious and carefully chosen, give the whiskey an aromatic complexity and balance appreciated throughout the world. Equipped with an extraordinary softness, Macallan whiskeys are lightly smoked, and are characterized by a softness that makes them unique and has made them known and respected throughout the world.
