Malvasia di Castelnuovo Don Bosco DOC is a wine produced at the Cascina Gilli winery in Castelnuovo Don Bosco. The company, founded in 1983, aims to enhance the native crops of the area, creating prestigious labels. The grapes come from the Malvasia vines, grown on soils rich in marl at 380 meters above sea level. After the manual harvest, we proceed with the destemming and crushing, then we proceed with the short-term fermentation on the skins. The must thus obtained is filtered to preserve its characteristics and aroma. Before bottling, the alcoholic fermentation takes place in an autoclave, thanks to the use of selected yeasts. To avoid further fermentation of the sugars, microfiltration is performed before being put on the market. Malvasia di Castelnuovo Don Bosco DOC is a sweet and delicate wine, perfect for immediate drinking, but it can rest in the cellar for about 1 or 2 years.
