Inzolia and Chardonnay are the vines used by the Milazzo winery to make this "Mediterranean" expression of classic method sparkling wine. A unique terroir, the Terre della Baronia with its 9 areas and related sub-areas, the portions of the vineyard in the Munti area where the clonal selections of Inzolia have been planted combine with those in the Milici area where we find some Chardonnay vineyards that benefit from a soil with a medium-textured profile and a good proportion of calcareous skeleton which allow for greater verticality and a strong acidic backbone, essential for creating high-quality Classic Methods. Not only thanks to the specific characteristics of the Campobello climate are we able to obtain a full maturation of the chosen selections, capable of preserving freshness, elegance and aromatic vein. Like all the sparkling wines in the cellar, this Brut ages for a minimum of 24 months on the lees, the Rémuage is done manually and after disgorgement there is a minimum of 6 months of aging and rest before being marketed. At sight it has a beautiful pale yellow color with greenish reflections and a very fine and persistent perlage. On the nose, the notes of aromatic herbs emerge, among which liquorice and wild fennel stand out, and it is enriched by floral and candied citrus scents. On the palate it is very balanced with synergy between the acidic backbone, structure and persistence that give it a good complexity.
