'Missianer' Vernatsch / Schiava AA DOC Kellerei St.Pauls 2021

Missianer Vernatsch Schiava Alto Adige DOC is a red wine with an unmistakable aroma, produced by the Kellerei St.Pauls winery. It is obtained exclusively from the vinification of Schiava grapes, a local variety that reaches high qualitative peaks on the Dolomite soils. The vineyards are located near the municipality of San Paolo, on a plateau about 500 meters above sea level. The sandy and clayey substrates and the strong temperature variations favor the optimal development of the vines over fifty years of age. When the grapes are perfectly ripe, the manual harvest is foreseen. In the cellar, the work begins with the fermentation in stainless steel, which lasts for about a month at a controlled temperature. Aging takes place in concrete tanks, where the wine rests on the fine lees for 5-6 months before bottling. Missianer Vernatsch Schiava Alto Adige DOC is a ready-to-drink red with potential for further evolution following 2-3 years of rest.
