Description
Muffato della Sala wine is a white wine classified as Umbria IGT. It was born on the Castello della Sala estate, owned by the Antinori family since the 16th century. Muffato della Sala owes its name to the fact that "botrytized" grapes are used for its production, i.e. grapes which have developed a specific mould, Botrytis Cinerea. The harvest takes place in the months of October and November, so that the morning mists favor the development of mould. This reduces the water content of the grapes by concentrating their sugars and aromas. The result is a wine with a harmonious and unmistakable taste. The grapes used for the vinification belong to five different vines: Sauvignon Blanc, Grechetto, Sémillon, Traminer and Riesling. From this mix an enveloping and sweet wine is obtained, with a great persistence. The vinification involves a brief fermentation of the must at high temperatures, then in barriques for six months and finally in steel for another two years.
