Description
The Oberkerschbaum Sauvignon Alto Adige DOC is a white characterized by a fine aroma, which represents the production philosophy of the South Tyrolean winery Hofstatter . Only grapes of the "international" Sauvignon variety are used to produce this wine. The vineyards are located within the "Oberkerschbaum" cru, a plot that rises 800 meters above sea level. By virtue of the exposure, the height and the composition of the substrate, the grapes develop luxuriantly, preserving a remarkable acidity. At the end of the manual harvest, the grapes are destemmed. The fermentation phase takes place inside steel tanks, where the wine then remains for 8 months also for the subsequent refinement in contact with the fine lees. This choice derives from the desire to enhance the typical varietal notes of the vine. When tasted, Oberkerschbaum Sauvignon Alto Adige DOC is perfect already after bottling, even if it can evolve up to 2-3 years, if stored with care.
