Description
The Palazzo Della Torre red wine from the Allegrini winery is a famous wine beyond the borders of the Bel Paese. This wine is an expression of the vineyard of the same name grown around the famous Renaissance palace Villa della Torre, or in the hills of Fumane di Valpolicella, an area famous thanks to its excellent morphological and climatic characteristics for growing vines. Particularly rich in watercourses, this area in fact has fertile soils and a mild climate which is particularly favorable for producing high quality grapes. Palazzo della Torre is a wine produced from the careful selection of Corvina Veronese grapes with the addition of Rondinella grapes and Sangiovese grapes. The harvest is done by hand in two phases: the first involves the collection of the berries destined for drying, the second of those immediately destined for vinification. This is followed by a separate temperature-controlled fermentation in stainless steel tanks. The dried grapes ferment for a period of 15 days at a temperature ranging from 25°C to 29°C while the fresh grapes undergo a fermentation of 10 days at a temperature ranging from 8°C to 22°C; after which there is the malolactic fermentation in barriques and the refinement of 15 months in second passage barriques; after which the wine is bottled, but before being placed on the market it must rest for another 7 months in the bottle. The result is an original, aromatic red with a full flavour.
