'Paradis' Pinot Noir Vineyards of the Dolomites IGT Borgo dei Posseri 2021

Paradis Pinot Nero Vigneti delle Dolomiti IGT is a red wine produced by the Borgo dei Posseri winery in Trentino. It is obtained by vinifying exclusively Pinot Noir grapes, an international variety that expresses itself at excellent levels on the Dolomite soils. The owned vineyards are located at 550 meters above sea level, where they enjoy a perfect south-west exposure and can benefit from a favorable microclimate. Once the ideal degree of ripeness has been reached, the bunches are selected with great care. In the cellar, the destemming is followed by a gentle pressing of the grapes. The alcoholic fermentation includes maceration and takes place in steel tanks for two weeks. For the aging phase, the company focuses on large oak barrels, where the wine rests for about 6 months before bottling. Paradis Pinot Nero Vigneti delle Dolomiti IGT is a perfect red immediately, but capable of positively surprising after 3-4 years of further evolution.
