The Pasithea Oro Alto Adige Gewürztraminer Vendemmia Tardiva DOC represents one of the flagships of the Girlan winery. This sweet wine takes its name from the Grace Pasithea, which in Greek means rest. In fact, it is precisely from slow agriculture that this label comes to life, obtained 100% from Gewürztraminer grapes. The South Tyrolean maison has most of its rows in the province of Bolzano, in Cornaiano. The soil is rich in sandstone sediments and the climate, with a marked temperature range, is perfect for the ripening of the grapes. The harvest is late and takes place in November, and the grapes are left to dry directly on the vine. In this way noble rot can develop, a fungus that gives the future wine a particular flavour. After pressing and maceration of the must it is necessary to refine the wine in oak barrels for at least 15 months. The Pasithea Oro Alto Adige Gewürztraminer Vendemmia Tardiva DOC is enveloping and delicate, able to conquer the most refined palates.
