With its fine and elegant aromas, Pecorino Abruzzo DOC Chronicon , made by Cantina Zaccagnini , is a white that fully expresses the character of Pescara viticulture. The grapes of the native Pecorino variety are grown on the hills overlooking the sea and enjoy its beneficial breezes. In the vineyard, the work carried out by the company involves traditional methods and very limited human intervention. Once harvested with the utmost care, the grapes arrive in the cellar. Here they are subjected to a first very soft pressing and then to a cold maceration. The temperature-controlled alcoholic fermentation takes place in steel tanks, where the wine remains to refine until the following spring. Pecorino Abruzzo DOC Chronicon rests for a couple of months in the bottle before being put on the market. It is advisable to open it shortly after bottling, in order to appreciate all the varietal notes carefully preserved during the vinification. On the nose it is of good intensity and persistence, on the palate it is fresh, savory and with marked acidity and minerality. Dry and harmonious, with good body and alcohol content, it is elegant and of intriguing complexity with aromas of ripe fruit.
