Description
Per' è Palummo Ischia DOC is a red wine produced by the Campania winery Cenatiempo , which is one of the most appreciated realities of the denomination. It is obtained from the exclusive vinification of grapes from the ancient native Piedirosso vine, which in the local dialect is known as Per'è Palummo. The vines grow on the Ischia hills, where they are carefully cultivated until the late harvest scheduled for the month of October. The bunches are selected by hand and transported to the cellar. The vinification begins with the fermentation on the skins, which lasts a week and takes place at a controlled temperature. The wine is then divided into two lots and left to refine partly in cement tanks and the remainder in steel tanks. After about 4 months, the wine is blended and rests for another month following bottling. Perfect from the start, Per' è Palummo Ischia DOC is capable of giving pleasant sensations even after 2-3 years of further evolution.
