Petraea Champagne Brut Nature is a label created by Francis Boulard , a vigneron dedicated to celebrating the peculiarities of his terroir. This champagne is obtained by vinifying Pinot Noir grapes in purity, which is the most representative variety of the area. The biodynamic concepts, which inspire the company in cultivation, allow the grapes to benefit greatly from the calcareous subsoil of the vineyards. When they arrive in the cellar, the grapes are pressed and then left to ferment spontaneously in large oak barrels. After the malolactic fermentation, during the second fermentation in the bottle, foreseen by the Champenoise Method, the wine rests on the fine lees for about six years. To allow the bubbles to express themselves in all their fragrance, "liquer d'expedition" is not added at the time of disgorgement. Ideal to be enjoyed immediately, Petraea Champagne Brut Nature can still amaze after 2-3 years of meticulous conservation.
