Description
The Pian di Stio Paestum Fiano IGT Bio from the San Salvatore farm has a perfect balance between vivacity on the nose and harmony on the palate. Thanks to a production philosophy that strictly embraces the organic regime, this winery stands out for its ability to fully exploit the characteristics of the native Fiano vine, whose grapes are harvested manually and vinified alone to produce this wine. The vineyards, located in the Cilento Park at about 500 meters above sea level, stand on clayey and calcareous soils, an aspect that gives the grapes complex scents and a good structure. Through a skilful production process, which involves soft pressing, fermentation and subsequent six-month aging in steel tanks, these peculiarities are preserved. Pian di Stio Paestum Fiano IGT Bio is best enjoyed shortly after bottling, to fully savor its freshness and minerality together with excellent fish dishes.
