Description

The Sanct Valentin Alto Adige DOC Pinot Grigio is a white wine made by the San Michele Appiano winery in the Dolomites. It is obtained from the single-variety vinification of Pinot Grigio grapes, a variety that stands out for its particularly intense colour. On the vineyards located about 500 meters above sea level, the vines find the ideal environment for growing in the gravelly and calcareous substrate. The harvest takes place in mid-September and involves the manual selection of the best grapes. In the cellar, alcoholic and malolactic fermentation take place in oak tonneaux. The refinement is divided into two phases: first the wine rests on the lees in barriques, where it remains for just under a year. The process ends with an aging of 6 months in stainless steel vats. The Sanct Valentin Alto Adige DOC Pinot Grigio can be enjoyed as soon as it is bottled, as well as after 7-8 years of further development.
