The latest addition to the Valvirgilio range of wines is obtained from the white vinification of Pinot Grigio rosé grapes. With this method, the must does not remain in contact with the skins, from which it would otherwise acquire its rusty colour. After a soft pressing of the grapes, the must is left to ferment for 15-20 days at 16° C. Once fermentation is complete, the wine is stored at a controlled temperature of 15-16° C in stainless steel tanks until bottling. Dry white wine of straw yellow color with slight coppery reflections; the scent is clean and intense and the taste is dry and pleasant with a large and varied bouquet, with particular hints that recall white flowers and ripe apples. Wine of great character and versatility. Excellent as an aperitif, ideal with first courses based on fish and shellfish, perfect with white meat or boiled fish
