Description
Pinot Noir Opoka is an elegant red wine produced by the Slovenian winery Marjan Simcic . The label is the result of the exclusive vinification of Pinot Noir grapes, an international variety that finds in the Brda appellation an environment conducive to development. The company's historic vineyards boast fifty-year-old vines, which have their roots in predominantly calcareous-marl soils. Organic cultivation is aimed at limiting human intervention. The manual harvest with selection of the best bunches is followed by destemming. Vinification continues with spontaneous fermentation on indigenous yeasts and long maceration in contact with the skins inside steel vats. The refinement first involves a rest of 4 years in oak barriques, of which almost a third on the first passage, to then continue in glass 6 months after bottling. Pinot Noir Opoka lends itself to a long evolution, even giving surprises after ten years of careful conservation.
