Les Crêtes, with the processing of its Pinot Noir in steel only, obtains an elegant mountain wine, which stands out for its more intense colour, accentuated fruit and complex structure. For the vinification, the refrigerated grapes are destemmed, cryomaceration for 2 days, fermentation for 8-10 days in stainless steel at a temperature of 24 °C, with daily pumping over. Aging in stainless steel for 6 months. In the glass we find it ruby colored. The nose is fruity (red fruit, undergrowth) with notes of sage. On the palate, fruity and savory with a fine structure and velvety tannins. Fresh and mineral finish. Perfect pairings with local dishes, such as: first courses; oily fish, cured meats, red and white meats, fondues, short and medium-aged cheeses.
