Description
Pinot Noir Alto Adige DOC is a red wine with intense and elegant aromas, produced by the Kellerei St.Pauls winery. It is obtained from the single-variety vinification of Pinot Nero grapes only, a variety that expresses itself in an excellent way at the foot of the imposing hills of the Dolomites. On the land of the San Paolo vineyards, located about 400 meters above sea level, the vines enjoy perfect conditions to grow luxuriantly, thanks to the gravelly and calcareous substrates. When they reach the ideal level of ripeness, the bunches are carefully selected and picked by hand. The vinification involves a first maceration on the skins, followed by alcoholic fermentation in stainless steel tanks. The refinement phase takes place in large wooden barrels and does not last more than 5-6 months. Pinot Noir Alto Adige DOC can be appreciated as soon as it is bottled, but also after a couple of years of further development in the cellar.
